Chefs Davey and Kierst Rabinowitz fell in love in the kitchen. The two met while working under celebrity chef Gregory Gourdet at Departure, a contemporary Asian restaurant in Portland. After training in fine dining establishments around the globe, a move back to Montana, and a new addition to their family, the husband-wife team put their heads together to create bisl, a visionary restaurant in downtown Bozeman.
Pairing familiar, sustainable farm-to-table ingredients with unexpected twists from global dining traditions, their dishes consider the source of each ingredient and how its essence might be best showcased through international techniques, from French aging processes to Japanese pickling.
